Gingerbread granola recipe.

Here’s another yummy recipe for your granola-loving friends and family.

Gingerbread Granola

Ingredients

4 cups rolled oats

1 cup Tasti long thread coconut

1 cup Tasti almonds

1/2 cup Tasti macadamias

1/2 cup Tasti cashews

3/4 cup Tasti pecans

3/4 cup Tasti hazelnuts

2 tsp ground ginger

1 1/2 tsp cinnamon

1 tsp ground nutmeg

1/2 tsp salt

1/8 tsp ground cloves

2/3 cup coconut oil, melted and cooled

6 Tbs maple syrup

3 Tbs molasses (or golden syrup)

1 tsp vanilla extract

1/2 cup white chocolate chips

Instructions

  1. Preheat oven to 180 degrees celsius.

  2. In a large bowl, mix together oats, coconut, almonds, macadamias, cashews, pecans, hazelnuts, ginger, cinnamon, nutmeg, salt and cloves. Pour coconut oil over mixture and stir. Combine maple syrup, molasses and vanilla and pour over oat mixture. Stir until all ingredients are evenly coated.

  3. Transfer granola to a baking tray and spread into an even layer. Bake, stirring and moving around with a wooden spoon every 10 minutes, until the mixture turns a nice, even, golden brown - usually about 30 minutes.

  4. Remove granola from the oven and stir frequently as it cools to prevent it sticking together. Once completely cool, mix in the white chocolate chips. Store in an airtight container.
